A canopy stall on Tottenham Court Road with a hot plate at the centre of it. The dough is rolled thin, filled, folded and griddled while you wait, then cut into strips and boxed.
Everything on the side is prepped fresh that day — red onion with parsley, bulgur with pomegranate, hummus. Halal throughout, with vegetarian and vegan fillings on the same board.
